My
Story
...The
middle of four brothers, I was born in the jungle of Veracruz.
My family was very poor and worked in the fields. I went to the
primary school in my little town. When I was 10 years old, I left
my town to continue my education. My road to school was 12 hours
away through the woods. The ride only we can make with the horses.
I never did see my parents in three months, only in vacations.
When finally I finished the school, I went to the capital of the
State of Veracruz. There I made one year of service teaching children
in the rural schools. After that I studied at the preparatory
school. In this school I won little prizes for writing and speaking
in public. I did some kinds of jobs to win money to my school.
...After that, I made other service
to get some money to try to continue my university studies. I
went to the university and took the career to work in a dental
laboratory. When I finished my studies, I couldn’t find
a job. For many reasons, I came to the USA. Now I am working in
the mornings and studying in the evenings.
...I want to be an English professor
in my university.
Food Handling in Restaurants
...The
handling of foods is the key of health. The main stomach diseases
are caused by contaminated food. The Health Department is responsible
to inspect and supply all the information about food handling,
personal and public safety in restaurants. The main products need
to keep in a refrigerator or freezer.
...Some products are capable of contaminating
other products with blood or juices. For that reason, all equipment
like knives, spoons, forks table boards, and towels used in the
process always must be clean.. It is absolutely necessary to wash
and disinfect with bleach all vegetables, especially salads. Some
vegetable are going to be served boiled or fried. In this case,
there is less a problem of contamination. Other fruits like bananas,
oranges, grapes, except frozen fruits, must be stored in a clean
and fresh place until they are prepared for salads or whatever
you need. Some fruits mature faster. If you want to delay the
process, store the fruits in a fresh place, but avoid the water.
...It is absolutely necessary to
keep all the milks and milk products in refrigeration until use.
If you need to make some stuff with milk, you must leave the milk
boiling for a lot of of minutes. In the restaurants there are
many kinds of milks, some coming in quarts or gallons. At this
time, it is important to check the expiration date and keep refrigerated
between 33 and 40 degrees. The meats always come wrapped in plastic.
That plastic protects the products until they are ready to cook.
Never break the plastics before the product is unfrozen. If the
products come unwrapped like a whole chicken, you must handle
it with special care because of the juices. Sometimes they can
have contact with other products. The meats must not be frozen
until they are ready to cook. When you cook big meats like roast
beef before you begin the cooking process. The meat must be cut
in the middle because it is too big to completely cook.
