My Story

...I am Lucy Santana . I am 27 years old and I came from Ecuador six years ago. In my country I went to college, but my dreams were frustrated because I came here. But this country and New York gave me great opportunity. I found amazing people. Now I am trying to make my dreams become a reality. I am studying at LaGuardia Community College, and day by day I am going to fight against any adversity. This is the way that I want to continue my life, always looking ahead. And for my future I would like to receive a degree as an English teacher. I’ll walk joyfully through the doors of opportunity and taste success.


Food in Ecuador

...I would like to begin with a little imaginative tour. I’m Ecuadorian, so I might say this is the most wonderful, magnificent country in the world. All countries have great things, but Ecuador is so special because it is a small country. It has a lot of ecology, and cultural and architectural treasures. The great attraction is the amazing island called “Galapagos,” which is richest in ecological resources. Who hasn’t heard something about this island? Ecuador is not only known for this fabulous island, but also for Ecuadorian cuisine too.
...Well, in my country you can find a broad spectrum of regional dishes, especially in my own town the specialty is “papas con cuy” (potatoes with cuy). This animal, cuy, is like a hamster, It’s a domestic animal like a chicken or a cow. Its meat is just delicious. Most of the people answer me, “Cuy.. It’s like a rat?” Well maybe it’s the cousin to the rat in the biological tree, but don’t be afraid because when you have the opportunity to eat it, the taste is amazing. In addition, in Asia or the West, it is called “Amazonia.” The indigenous people eat monkeys, snakes and iguanas. Indeed we can say this is exotic food.
...Ecuador offers delicious typical dishes from the Coast. Your tastebuds will happily discover a new culinary twist with “Encocados,” seafood dished prepared in coconut milk. You will also discover the amazing ceviche, a seafood dish marinated in lemon and onions. Ecuador’s answer to sushi. Unlike sushi however, Ecuadorian ceviche is a meal dished up with popcorn! Ceviche can be made of fish, shrimp, shellfish, squid, or all of the above.

Health and Food

...I think that health is the most important thing in life. I can say in my country the older people have the same problems with high blood pressure and cholesterol like in the United States, except their problems are not caused by obesity. Most of the activities are done by foot. To control the pressure and cholesterol I can hear some doctors and nutritionists in radio and TV who have talked and said, “A healthy diet is important for your family.” For a balanced diet eat some servings from all five food groups. Eat carrots, lettuce, broccoli from the vegetable group. Eat cheese, yogurt and milk from the dairy group. Eat from the meat group and from the bread and cereal group.
...In conclusion, I can say you must combine both health and food because they are the support in our lives. Is necessary that carbohydrates contribute to our daily diet. So, we much enjoy all foods and beverages but all in moderation. This is my advice for healthy life. In addition, exercise plays another important role as well as health and food.
